Instant Pot Russian Chicken

Every Thursday I am going to be posting a new recipe. They won’t always be Instant Pot recipes, but I am just on an Instant Pot kick lately. This will help me branch out and try some new recipes and even write down of some of the “recipes” that Jason makes.

This week, we had what I call Russian Chicken. This is a recipe that I randomly found about a year ago and now is one of my family’s favorite meals. We used to make this in the oven but I found a recipe that allows me to make it in the Instant Pot in half the time!

Here is the recipe I adapted from This Old Gal.

Ingredients 

4 to 6 Chicken thighs boneless and skinless
16 oz Bottle of Russian Dressing
8 oz Apricot Preserves
1 packet Lipton Onion Soup Mix
1/4 cup Fresh Water
2 cups white rice

Instructions

Mix together Russian/Catalina Dressing, Apricot Preserves, and Lipton Onion Soup Mix.
Add water to your Pressure Cooker cooking pot.
Place chicken in Pressure Cooker cooking pot. Pour Sauce over the chicken.
Lock on Lid and Close Pressure Valve. Cook for 8 minutes.
When Beep sounds, allow a 10-minute Natural Pressure Release.
Remove chicken to a plate.
Select Sauté or Browning and simmer until the sauce has thickened. Plate chicken and pour sauce on top.
Cook rice as per package. I did the “pot in pot” method of cooking my rice. I used an 8 inch round cake pan and put in 12 oz of rice and 12 oz of water and set the pan on my trivet in the Instant Pot. The rice then cooked in the Instant Pot at the same time as the chicken!

Mix together Russian/Catalina Dressing, Apricot Preserves, and Lipton Onion Soup Mix.

Place chicken in Pressure Cooker cooking pot.

Pour Sauce over the chicken.
